Ingredients

Crab & Avocado Salad

  • 8 oz Crabmeat

  • 1/3 Cup Red Onion, Finely Chopped

  • 3 tbls Mayonnaise

  • 2 tbls Fresh Cilantro, Chopped

  • 3 tsp Fresh Lime Juice

  • 1/2 tsp Roasted Red Peppers

  • 1/2 tsp Lime Zest

  • 1 Ripe Large Avocado, Peeled, Mashed

Herb Vinaigrette Dressing

  • 1⁄4 Cup Fresh Lime Juice

  • 1⁄2 Cup Extra Virgin Olive Oil

  • 2 tsp Chopped Cilantro

  • 1⁄2 tsp Dried Basil

  • 1⁄2 tsp Dried Dill Weed

  • 1⁄2 tsp Salt

How To Prepare

  1. Stir in red onion, mayonnaise, cilantro, roasted red peppers, 2 tsp lime juice, and cumin together in a medium bowl.

  2. Mix in crabmeat and avocado. Season salad with salt and pepper.

  3. Using a food ring, plate the mix in the center

  4. Drizzle herb dressing on top

  5. Top it off with 1/2 tsp of lime
