Ingredients

Toffee

  • 3/4 Cup Brown Sugar

  • 1/2 Stick of Butter

  • 5 Ounces of Diced Pitted Dates

  • 3/4 Cup Water

  • 1 Cup All Purpose Flour

  • 1Tsp Baking Powder

  • 1/4 Tsp Baking Soda

  • 1 Tsp Vanilla Extract

  • 1 Egg

  • Pinch of Salt

Caramel Sauce

  • 5oz Butter

  • 1 Cup Brown Sugar

  • 1/2 Cup Heavy Cream

  • 1 tbsp

  • Vanilla Extract

  • Pinch of Salt

 

Garnish

  • Gooseberry

  • Blackberry

 

How To Prepare

Sticky Toffee Pudding

  1. Cook 6 ounces of diced pitted dates in 3/4 cup of water using a small saucepan. Cook the dates until they are soft. Pour the contents into a blender and puree.

  2. In a bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/4 teaspoon of baking soda and a pinch of salt. In another bowl, use an electric mixer to mix 1/2 stick of sweet unsalted butter with 3/4 cups of brown sugar. Add 1 teaspoon of pure vanilla extract, a large egg, 1/4 teaspoon of orange zest and the date puree made previously. Add the dry ingredients and stir.

  3. Pour the mixture into a prepared baking pan and bake at 350F until the pudding is set and firm on top.

  4. Place toffee on a plate and garnish with caramel sauce and berries.

 

Caramel Sauce

  1. Melt butter in a saucepan, add the brown sugar and whisk until fully combined

  2. Add the cream and bring to a boil, then reduce the heat to a low simmer and cook for another 7 minutes

  3. In the final stage, add salt and vanilla and stir

  4. Finally, organize the plate and enjoy!
